Sciamadda dei Vinaccieri Ballerini is the result of a curious mix of Ligurian, Tunisian (the name comes from the island of Tabarca) and Sardinian cuisine. It is a story full of magic, curiosity, sacrifices, bets, sweat, and emigration. The menu is essential with a predilection, clearly, for fish dishes. To be tasted are the different types of chickpea farinades, typical of the Genoese tradition - in addition to the classic one, also the Crescenza and Pesto - the Tabarchina lasagna (palamita - tuna - tomato and pesto) and the Cascà of fish and vegetables (the Tabarchina soup of the exiles of Carloforte).
